Food Safety, Nutrition and Hydration

Including understanding the M.U.S.T (Malnutrition Universal Support Tool)

This half day course is designed to help equip staff working within the health and social care sector to meet the food safety, nutrition and hydration needs of our clients, supporting a person-centred approach to a healthy diet.

Course contents

  • Understanding the need for safe food handling, storage and preparation, (including temperature control)
  • Identifying foodborne pathogens, illnesses, diseases and poisoning
  • Awareness of Health & Safety Legislation & best practice guidelines
  • Controlling food safety ; Hazard Analysis
  • Management of one’s own personal hygiene & health
  • Understanding  the “Danger Zone” & “High Risk” foods
  • Understanding the need for appropriate and adequate cleaning, disinfecting, refuge collection and pest control
  • Promoting good nutrition and hydration to maintain health & well-being and the ways to promote this.
  • The importance of person centred planning
  • Recognising signs and symptoms of poor nutrition and hydration, including understanding M.U.S.T
  • The importance of risk assessments and correct documentation

This training can also be delivered as 2 separate, 3-hour courses if preferred: 1)Food Safety 2)Nutrition, Hydration & M.U.S.T. depending on requirements.
